Heritage & Seasonal Varieties

 

We have pioneered the cultivation of many organic specialty mushroom varieties over the years. The following heritage and seasonal varieties are not currently available, though we occasionally produce small batches on a limited, seasonal basis.

 

Lion’s Mane

A slightly sweet and flavorful mushroom that resembles crab or lobster meat.

Forest Nameko

The glossy, moist texture of this mushroom adds an enchanting dimension to culinary creations.

Nebrodini Bianco

A relative of the Trumpet Royale, its flavor is sweet and rich. Its tender, creamy, rich texture makes it a chef’s favorite.

Shiitake

The first mushroom we cultivated. Shiitake is beloved around the world for its rich umami flavors.

Baby Blue Oyster

These mushrooms have a beautiful, slate blue color, a mild taste profile, and a meaty texture

Almond Mushroom

The Agaricus blazei mushroom has a slightly nutty taste reminiscent of almonds.

Velvet Pioppini

The intense forest flavor makes it a natural companion of pastas, game, and red meats and a friend of big red wines

Versatile, crunchy mushrooms ideal for roasting, soups, and sautés

Morels

A perennial favorite of foragers. Our team was the first to successfully cultivate morels indoors.
